Tasty Tuesday: Three Ingredient Nutella Cookies!

Recently, I saw a recipe on pinterest for three-ingredient Nutella cookies, and I was intrigued. I knew I had to make them. It must have been fate, because when I was grocery shopping, Nutella was on sale! It's never on sale! 

Yes, I take photos at the grocery store...is this weird?! Probably. 

Anyway, back to the cookies.

It's a very simple recipe; flour, Nutella and an egg. I pulled out my mixer and mixed away. You'll need one cup each of the flour and the Nutella, and then an egg. Blend them together. The dough was very crumbly, and wouldn't hold together well at all, so I added a few dashes of vanilla, to juice them up a bit. 

I guess they're now four ingredient Nutella cookies? 

The recipe I followed (linked here) says to bake them for 7-8 minutes, but I found that they needed closer to 10 or even 12 minutes. That could be due to my adding the vanilla...

Also, the recipe just made about a dozen cookies...interestingly enough, one cup of Nutella is just about one jar....so, if you have many people to share with, I'd double, or even triple the recipe, to be sure you have enough! Or, make them smaller? Mine aren't that large though, I don't think!

They were very dense, but delicious! I'd suggest eating them with a tall glass of milk!

Chocolate Chip Cookies!

This recipe makes about 30 tiny cookies or 12 big ones. They are just light and healthy enough to be okay-ed as a treat in our house, and yet sweet and chocolate-ey enough to be enjoyed! They’re especially good straight out of the oven, or toasted.
whisk together
1/2 cup oil
1 cup sugar
whisk in
1 egg
1t vanilla
Blend in a separate bowl and then mix with liquid ingredients
1 3/4 cup flour
1/2 t soda
1/2 t salt
stir in
1 cup oats
1/2 – 1 cup chocolate chips (1 cup is really too much, but 1/2 cup isn’t quite enough… depends on your stash of chocolate chips!)
Bake for about 10-12 minutes at 370F

Fierce and Free

Since meeting the women next door, we have been awestruck by the ferocity of spirit and bravery these refugees embody.  As they tell us stories of walking for weeks to safety in the dead of night and without speaking to avoid detection, we can hardly fathom the journey they've been on to reach safety here in this dusty West Texas town.

And while they are no longer in danger, life is certainly not easy.  We've seen the challenges and injustices they face in our own country... and the never-ending stream of tiresomely overwhelming little inconveniences that come up as they continue adjusting to a new culture and a new language. 

And yet they always seem to have smiles on their faces and are often the ones telling us not to worry so much.

Boy's and Men's Design*

They are strong and they are brave and they are free.  But we wanted to do something more to help make life a little easier for the Burmese refugees who have become our friends.  So we designed these tees to embody all that we see epitomized in the refugee spirit - freedom, bravery, and ferocious hope.  We are selling these t-shirts as a fundraiser.  The shirts cost $20 + $5 shipping.  Half of the proceeds will go to meet needs in our local Chin community, and the other half will be used to further develop the Chin Collection, enabling us to get our sewing project more fully off the ground.

We have been advised that the toddler sizes run a bit small.  When in doubt, order up.  Kids keep growing after all!  The women's shirts are a trim fit, so also consider ordering a larger size if you prefer a less-clingy shirt.  Shirts are available in sizes: 12 months, 2T, 3T, 4T, 5/6, 7, Youth Small, Youth Medium, Youth Large, Adult Small, Adult Medium, Adult Large, and Men's XL.  Colors are approximate as these are still under production!
