Celebrating Family

Happy Chinese New Year! 农历新年

It is time to sweep away any ill fortune and make way for double happiness! It is a time to celebrate family: those who have departed, those who we are lucky enough to have with us, and those who we are expecting - a sweet little niece that I know of.

This is Alea, my niece-to-be. 
Carrie, Jacob, and Cora hope to travel to China in March to complete her adoption!

Our little business is focused on family. We are focused on bringing the products of talented artisans to new markets. In this way, we hope that our artisans are able to always meet the needs of their families. We are focused on developing community - a family far away from a homeland - for refugees in our hometown of Midland, Texas. We are focused on adoption through our fundraising kits and our Scarlet Scraps Adoption Grant Fund.

As our own family gears up to grow by one in the next couple of months through adoption, we wanted to take this time to focus on that last part of our mission -- Adoption.  Be watching early next week to meet the recipients of 2013's adoption grants!  We have decided that our adoption grants (funded through the sale of our Scarlet Scraps line) will go to families who have partnered with us through our fundraising program, so if you are an in-process adoptive family interested in receiving our grants, check out the fundraising program.

Proceeds from our newest product - A Glimpse of China Notecards ($20) - will go to our Adoption Grant Fund as do all purchases from the Scarlet Scraps product line! Thrifty Thursday: Robot Applique Tee

Tasty Tuesday! Banana Chocolate Chip Muffins, with Coconut!

Confession:  I am not a huge fan of bananas, but I find myself buying them from time to time, hoping that one of these days, my taste buds will have changed. The funny thing though, is that I like bananas in some things, but not typically on their own. I'm the same way with tomatoes, but that is another story.

Over the weekend, I bought three bananas, and last night, they seemed to be at peek ripeness, so I decided to turn them into muffins. I also had half a bag of chocolate chips, so naturally, those needed to be added. 

I followed this recipe, for the most part.


1 1/2 cups flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (about 2 large)
1 large egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 cup semisweet chocolate chips


Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.

Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.

The recipe said it yields 12 muffins, but I got about 18 out of it! 

I also added some shredded coconut, for fun. Also, I added a spoonful of chia seeds and wheat germ, to made them healthier  ;)

They're delicious! I may have had one or two for "desert" last night, and then another two for breakfast this morning! I always like to cut muffins in half, warm them in the microwave for 30 seconds or so, and then add a dab of butter. Then, a cup of tea, and you have a bit of perfection right there!
